The meals and the style of cooking are closely connected with the history of the country. In the past, the meals were prepared daily. Today it is altered to suit the desires of the wealthy, the holidays and special occasions. The traditional meals are of hearty style, eaten with short preparation and a couple of side dishes. The best known are the Pizza and the pasta dishes.

The form of cooking has also undergone a transformation in the last decades from the traditional to the quick and healthy style. Gone are the days when the meals were handmade with every piece of meat or fish required to be cooked. The meat and fish are usually already cut and the cooking progressed from there.

In the recent years, the Italian food has undergone a drastic change. The traditional meals are giving way to the new era of Italian food, characterized by an intense love affair with fruits and vegetables. The meals that were once prepared by small families and served on the table only several years back, have now become a custom and a tradition for all families.

This is not to imply that old styles of Italian food are going to be handed down to future generations. In fact, just the opposite is true. The tradition, and the way food is prepared, is and will remain the same. However, in regards to the ingredients and how meals are prepared, it is dependent on the circumstances of each family. Each family will decide for itself how to prepare each meal. There are no set rules and ideas to follow. This is merely to inform you that there is in fact a fluid change taking place in Italy regarding their cooking tradition. They are wondering why and how it will affect what they are bringing to their table.

The answer is quite simple, the means are now available to produce quality meals with better quality and healthier ingredients. The ancient tradition of home cooking is giving way to complex meals that involve the use of spices and the preparation of foods that don’t easily digest. Also, there is less meat, butter, and eggs in the traditional Italian cooking. These were traditionally produced out of necessity due to the climate where the Italians lived. As time went on, they learned that by adding things to the cooking, they were able to preserve and even in some ways improve the taste and quality of the food they were serving. Before, cooking Italian food required a lot of time, preparation and the most importantly, a lot of patience.

The reshaping of the Italian food scene has made it easier for cooks to produce quality meals that have a great deal less time in preparation.
