All these years I have been drinking iced tea, eating fruit and sometimes concocting my own concoctions when the according to my ahibe is not quite right. A few years ago, I realized that I may have accidentally eaten two types of peppers all at once (yuck) and so I didn’t follow it up with much.

Before I get into the meatless meals, let me discuss vegetarianism and the benefits of this way of eating. For years, I was convinced that a vegan lifestyle was required to be healthy and whole. While I still am not a vegan, I am very conscious of the things I eat and am working to cut it down to a healthier version than the one I am used to.

What I have discovered is that a plant-based diet is a great way to stay healthy and is friendly to the environment as well. By usingbooks for recipes, finding new ways to use less meat and getting creative with meals, I am able to have new treats and incorporate a lot more vegetables, less meat and more healthy foods.

My one son really wanted us to try this new diet and so we began to integrate a new set of recipes. You may be wondering what he has been up to these past few months. Well, he has been on this new diet since he was about four and has been increasing his intake of whole foods. His favorite right now is peanut butter mashed with whole grain bread. He sees this as a good alternative to other processed breads.

We have not necessarily gone full green, but he is definitely making a healthier diet choices. Thanks to Whole Foods, he has even found a new kind of milk – almond milk. He likes the taste, the texture and the health benefits. There has been a big increase in the variety and a new way to use many of his favorite foods. He likes to eat hummus instead of other pastries, instead of pizza or tacos, and has been trying the various teas and lunches we have tried as well.

We have spent the day visiting local farm stands and farmers’ markets. We made a full day out of visiting each booth and tasting a huge array of farm products. We picked up orange blossom buds, yellow florets and white waesung (a crop of rice). We picked up a number of organic eggs, and brought the eggs home to make an easy breakfast egg recipe for the next day.

This morning, he surprised me by asking why we had came so far to begrudgingly accept that third-graders could not have the rancid, genetically modified corn oil-fried, full-fat version of this ubiquitous breakfast cereal. I explained to him that pitted and snipped corn on the cob is a completely different product with a completely different flavor. But he would not hear the reasons why he should change his mind and eat the Corn Oil. He was too full of himself to listen to reason.

So for the next year, instead of slowly acquiring a taste for the Corn, he began demanding that we drops of the Corn from our breakfast along with Kool-Aid, three sugars, salt and minerals. Once he got used to the taste of plain Corn-N-Bean paste, he was happy to eat it just as much as he wanted to. I tried to counteract his demand with Kool-Aid, but it was either the way he forced me into it or I gave in to his attack on the package.
